- 100g oat flour
- 130g rolled oats
- 1 tsp baking powder
- 4 tbsp Sweet Freedom VANILLA SYRUP
- 1/2 cup of melted coconut oil
- 1 tsp lemon zest
- 100g frozen blueberries
- 1 tbsp lemon juice
- 1 tsp lemon zest
- 1 tbsp chia seeds

- Preheat your oven to 180C (or 160C for fan) and line your baking tin.
- Mix your ingredients for the fruit toppings together in a saucepan on a medium heat and cook for 5 minutes.
- Take off the heat and put it to one side.
- Mix your dry oat base ingredients together in a large bowl, then fold in the VANILLA SYRUP, coconut oil, and lemon zest.
- Transfer 3/4 of your oat mix to the baking tin.
- Smooth and press down with the back of a spoon.
- Pour your berry mix onto the base and spread out evenly.
- Sprinkle the rest of your oats on top and cook for 30-35 minutes.
- Allow to cool, and cut into bars.
