ingredients

for the base:

  • 100g pistachios⁠
  • 75g oats⁠
  • 6 tbsp LIGHT SYRUP⁠

for the cheesecake filling

  • 500ml plant-based milk (soy, almond...)⁠
  • Juice and zest of 1 lime⁠
  • 6 tbsp LIGHT SYRUP ⁠
  • 50g corn starch

make 

    1. Blitz the ingredients for the base in a food processor. ⁠
    2. Press the mixture into 3 small ramekins or moulds. ⁠
    3. Blend the ingredients for the filling (minus the lime zest) in a food processor until smooth. ⁠
    4. Pour the blended ingredients into a pan and then add the zest of the lime. ⁠
    5. Heat up on medium to high heat and stir constantly until the liquid starts to thicken.⁠
    6. Spoon this over the base. ⁠
    7. Sprinkle some crushed pistachios on top and then let them set in the fridge for two hours. ⁠
    8. When they have set, remove the moulds and serve with a slice of lime on top.
