ingredients
for the base:

100g pistachios

75g oats
- 6 tbsp LIGHT SYRUP
for the cheesecake filling
- 500ml plant-based milk (soy, almond...)
- Juice and zest of 1 lime
- 6 tbsp LIGHT SYRUP
- 50g corn starch

Blitz the ingredients for the base in a food processor.

Press the mixture into 3 small ramekins or moulds.

Blend the ingredients for the filling (minus the lime zest) in a food processor until smooth.

Pour the blended ingredients into a pan and then add the zest of the lime.

Heat up on medium to high heat and stir constantly until the liquid starts to thicken.

Spoon this over the base.

Sprinkle some crushed pistachios on top and then let them set in the fridge for two hours.
- When they have set, remove the moulds and serve with a slice of lime on top.
