once you try this recipe, you’ll never go back to store-bought baked beans!
ingredients
- 1 tbsp olive oil
- 1 red onion chopped
- pinch salt
- 1-3 cloves garlic, minced (depending on how garlicky you like things!)
- 2 tsp sweet smoked paprika
- 1 tsp hot smoked paprika or chilli powder (optional)
- 1 tsp mixed spice
- 1 can (400g) chopped tomatoes
- 1 can (400g) cannellini beans or butter bean
- 1 tbsp Worcestershire sauce (Biona and Hendersons both have vegan versions) or you can use tamari or soy sauce*
- 1 tsp Sweet Freedom FRUIT SYRUP or LIGHT SYRUP
- freshly ground black pepper

- Heat oil in a pan large enough to hold the ingredients, put in the onions with the pinch of salt, and sweat for a few mins, a little colour on them adds taste but be careful not to burn!
- Stir in the garlic and then the spices.
- Stir for a couple of mins, then add the tomatoes, beans and Worcestershire sauce.
- Simmer for 10-15 mins, taste and add in the black pepper to your taste.

Notes: This is a very forgiving recipe, guidelines really! For extra nutritional boost and veggies, add in a couple of diced carrots with the onions at the start, and stir in a bag of spinach towards the end of cooking.
*check the label, a lot of these have loads of additives, the Kikkoman brand is a good option.
