fluffy banana pancakes

No brunch spread is complete without pancakes. These fluffy banana pancakes are naturally sweet and pair perfectly with a drizzle of Sweet Freedom Pancake Syrup.

Ingredients

  • 1 ripe banana
  • 80g rolled oats
  • 2 tbsp ground flaxseed + 5 tbsp water (flax “eggs”)
  • ½ tsp baking powder
  • 2 - 3 tbsp your favourite milk 
  • Sweet Freedom Pancake Syrup, to drizzle
  • Fresh berries, to serve

Method

  1. Make the flax eggs: Mix the ground flaxseed with water and leave for about 5 minutes until thick and gel-like. 
  2. Blend the banana, oats, flax eggs, baking powder and milk until smooth.
  3. Heat a non-stick pan over medium heat and cook small pancakes until golden on both sides.
  4. Stack them high, add berries and drizzle generously with Sweet Freedom Pancake Syrup.

Perfect for a relaxed Mother’s Day morning.


strawberry & yoghurt brunch pots

These layered yoghurt pots look beautiful on the table and take just minutes to make.

Ingredients

  • 400g of your favourite natural yoghurt, we love coconut yog
  • 150g strawberries, sliced
  • 40g granola or chopped nuts
  • 2 tbsp Sweet Freedom Fruit Syrup

Method

  1. Layer yoghurt, strawberries and granola into glasses or jars.
  2. Drizzle Sweet Freedom Fruit Syrup between the layers for natural sweetness.

They’re fresh, colourful and ideal if you want something lighter alongside pancakes or pastries.

Ingredients

  • 2 slices sourdough or wholegrain bread
  • 1 - 2 tbsp Sweet Freedom Choc Pot Hazelnot
  • 1 banana, sliced
  • Pinch of cinnamon
  • Optional: 1 tbsp chopped almonds or seeds

Method

  1. Toast the bread and spread generously with Choc Pot Hazelnot.
  2. Top with banana slices and a sprinkle of cinnamon.

blueberry brunch muffins

A batch of homemade muffins instantly makes brunch feel special. These soft blueberry muffins use Sweet Freedom Light Syrup instead of refined sugar.

Ingredients

  • 180g wholemeal flour
  • 1 tsp baking powder
  • 1 tbsp ground flaxseed + 2½ tbsp water
  • 60ml olive oil or melted coconut oil
  • 60ml Sweet Freedom Light Syrup
  • 120ml milk of choice
  • 120g blueberries

Method

  1. Preheat the oven to 180°C (160°C fan) and line a muffin tray with cases.
  2. Make the flax egg: Mix the ground flaxseed with water and leave for about 5 minutes until thick and gel-like.
  3. In a bowl, mix the wholemeal flour and baking powder.
  4. In another bowl, whisk the flax egg, oil, Sweet Freedom Light Syrup and milk.
  5. Combine the wet and dry ingredients, mixing until just combined.
  6. Gently fold in the blueberries.
  7. Spoon the batter into muffin cases.
  8. Bake for 18 - 20 minutes until golden and a toothpick comes out clean.

Serve warm for the ultimate brunch treat.
